Whoever said diamonds are girl`s best friend, never really had good mashed potatoes. They are one of best
side dishes ever! And; if you are like me who loves her carbs; it could be the main dish too *wink wink*. Let’s
look at some dos and don’t before we go on to the recipe.
Tips for how to make the best mashed potatoes ever
Before we start with the actual recipe, let’s talk about some secrets that will get everyone talking about your
potatoes.
Use a combination of potatoes: In Pakistan, we have white and red skin potatoes. Some people prefer the reds
over whites but, in my opinion, best results are obtained when you use both red and white in 50 50 proportion 
Avoid water-logging your potatoes: Its true, there is such a thing as too much water in mashed potatoes. Water
is the most dangerous enemy of masked potatoes. To combat this enemy, you must;
Cut your potatoes into equal size so that all the pieces are cooked evenly
Don’t leave the potatoes in water once the knife can go in it with minimum effort
Don’t over-mash/mix the potatoes otherwise the starch in the potatoes will give you a gluey consistency.
Season you dish throughout the process. first, we season the water in which potatoes are boiling and second,
we season them when we add out liquids to the boiled vegetable. 

Ingredients and Recipe Checklist


  Potatoes – Both red and white kind. But if you have a preference, you can always go with your gut feeling
Checkmark Garlic – I prefer to use fresh garlic since they give a rich taste, but powdered garlic and garlic paste can do
the trick
Checkmark Butter – I prefer to use salt free butter. It can be swapped with any vegetable oil if you’re on a vegan diet or
animal shortening can be used too.  
Checkmark Milk – Cow`s milk is always my go-to milk, but heavy cream can be used to give it that rich and tick
consistency. Soya, almond and coconut milk can also be used if you`re vegan or even if you`re on Keto or
another low carb diet plan.
Checkmark Cream Cheese – It gives the recipe a creamy tangy taste so it`s not everyone`s cup of tea. But if you do,
make sure that you cut it into small inch cubes, so it easily blends in with everything.
Checkmark Fine sea salt – I prefer pink Himalayan salt instead of regular table salt, but any salt will work.
Checkmark Topping (Optional) –I like to put crushed pepper or green onion on top of my potatoes. People also use
shredded cheese which also seems like a good option.
Group of people This recipe will serve 8 hungry bellies.

½ cup
Butter 
1 cup – ½ cup cream
Milk/Cream
¼ cup 
Cream Cheese

2 or more cloves
Garlic

How to make mashed potatoesChef

Cut the potatoes: I prefer to cut them with skin but skinless works too. The size should be proportionate, so all
the potatoes are evenly cooked from inside. 
Boil the potatoes: Once the potatoes are done, be sure that they are in a pan and water is almost 1 inch above
the potatoes. Bring it to boil and season it with salt. Once the knife can go in all the way with minimum effort,
boiling part is done.
Butter mixture: This part can be done simultaneously when potatoes are boiling to speed up the cooking time.
Melt your butter in a double boiler and add milk/cream to it. Once the mixture is smooth, take it off the heat
and add salt and freshly chopped garlic/ power/paste.
Bring everything together: Once you do the knife test on potatoes, take them out of the boiling water, peal them
and put them in a pan. Be careful not to burn yourself. Mash the potatoes using your preferred kind of masher.
Carefully mix in the butter mixture and keep on mixing. Make sure to stop when the potatoes reach a smooth
consistency. 

Taste, season and serve them hot!

Breakfast is my personal favorite and the most important meal of the day. It’s the fuel that keeps you going for
the whole day. A good breakfast makes or breaks your day. The best option is to have wholesome healthy items
for breakfast. Even when you’re in hurry, prefer apples and yogurt over power bars and cereals. 
This pancake recipe is simple. You need not more than 20 minutes to prepare the whole dish and you can
tweak the recipe from here and there, add some garnishing or side dish and you`ll have a fancy breakfast for
special occasions.
How to make pancakes

Before we start with the actual recipe, let’s talk about some secrets that will get everyone talking about your
breakfast.
Cooking utensils: A big part of success of any recipe is the utensils used to cook it. And for pancakes, utensils
are extra important. 
For mixing, I prefer to use hand blender. Its easy to use and it does not create any mess. You can also use a
simple whisk to blend all the ingredients together but make sure that the ingredients are actually “mixed”
together. Otherwise you’ll be left with pancakes with lumps in it. 
For cooking, befriend a nonstick pan and spatula. Hard silicon spatula will work best in this case.
The ones which are extra thin from the top helps in flipping the pancake half way through the cooking process.
Mix that goodness: Take a big mixing bowl and put in all the dry ingredients; your usual flour, baking powder etc.
Once the dry mixture is ready, make a hole in the middle of the bowl and pour in eggs, milk etc. Slowly keep on
adding the dry mixture to the wet ingredients. Make sure there are no lumps in the mixture. 
Greasing rules: Don’t give American’s an invading invitation to your pan. Grease it well but there must be no
oil/butter roaming around unsupervised in the pan. 
Flipping guideline: Don’t flip pancakes too early or too late. Wait for the bubbles to cover the surface of the
pancake. Once it`s covered, make the flip.

Serve them hot with some sweet goodness on the side. You can never go wrong with maple syrup and butter,
but you can change the topping to literally anything you like. 
In the end, just remember, practice maketh a perfect man or in our case, a perfect pancake.

Ingredients and Recipe Checklist

 Checkmark Flour – You can use both regular flour and self-rising flour. If you`re going for self-rising flour, make sure
that you skip or at least minimize the amount of baking powder from the recipe. For no/less carb diet, replace
this with any other kind of flour that you prefer. Almond flour is more dense then regular flour so it is
recommended to use a mixture of flours like coconut, almond and husk in place of “flour” in this recipe. 
Checkmark Baking powder – It’s a rule of thumb, for 1 cup of regular flour, 1 spoon of baking powder is required.
Too much of baking powder with leave a salty taste in your recipe. If you prefer to use baking soda instead of
baking powder, again you will need to reduce the amount of baking soda since it is stronger than baking powder. 
Checkmark Sugar – White sugar is recommended for this recipe. However, substituting white sugar with brown or even
with any other kind of sweetener will not raise red flags. 
Checkmark Milk – My preference in milks is full cream cow`s milk. If your diet does not allow you cow`s milk, don’t
deprive yourself from this wonder of life and use lactose free, soya, almond or any other milk that you can use. 
Checkmark Eggs – One large egg is perfect for this recipe. You can also take organic (brown) eggs if you`re accustomed
to their taste. 
Checkmark Butter/Oil – Use unsalted butter for greasing and for putting it in the recipe.  
Group of people This recipe will serve 2 hungry bellies.

Success Story of woman led business

Sarang, my favorite desi food stop in Islamabad and woman behind it:
Are you a biryani lover or looking for some desi eatery here in the Capital city  but can’t find any good and affordable one?
If yes, then, you are missing out this place, recently opened up, in F11 markaz, street 73, next to shaheen chemist, Islamabad. 
I explored this place recently with my friends, looking for some good and affordable desi eatery, short of time and waiting for our next class to start. As students, we often have limited budget to spend daily and yes a whole day forward ahead of us. On the other hand, even as employers, we need to spend sensibly daily, can’t afford fast food daily in lunch. Luckily, by surprise, we ended up inside this restaurant, near to our campus, ordering their famous biryani platter. The menu, consist of, variety of desi food including, Palak paneer, Allu ghost, Biryani, Qeema Allu, and some other dishes and you can even order their home made Chapati if you are not a rice fan.
You will be surprise to know, who the cook was.
An aunty greeted us when we walked inside her restaurant, not a typical modern aunty who is running a business but reminding me of my mom back at home or any other aunty being called as “typical” housewife. Limited staff only and yes a woman handling this food business and running here and there, utilizing her cooking skills and entertaining her guest with her recipes. Not at all, a fancy restaurant to look forward to but a decent sitting environment, serving the best desi food in town. The food is served in traditional “thaalis” and with a flavor of good spices.
So yes, I am writing this post to enlighten you about this place that you are missing out. Please go and check it out.
Secondly, for motivating a lot of women out there like her.
You don’t always have to be social, modern, up to date or experienced but if you have a skill utilize it. No one is useless, out here in this world, especially, women out there, more talented than men but not motivated enough to show the world what they are capable of.

Ahh, Age and the Questions associated with it: 
Hi girls, hope you like our blogs and somewhat it is helping you, stressing less over our societal
pressures and gender barriers and judgments. I am once again here to talk about how our society
takes age so seriously especially for us, women out there.
Well, honestly speaking, chill out and relax because Age is just a number!
It is true that with age we feel lethargic, our skin loose it’s glow, and most importantly less energetic
and daring. But have we ever wondered or asked ourselves why it is so?
When I gave it a thought about it, I got my answers for morally feeling low or being less energetic like
I used to be in my teens.
Hey ladies, with age responsibilities increases and yes, we hit reality but we often forget how to take
out time for ourselves and for our families and close friends who boost our energy after a hectic
routine or busy day and we feel positive and energetic again.
Then on the other side, there are some people out there, questioning us, “Beta, shadi kab karoun gi,
age nikal rahi hain” “yeh koi umar hai parhnay ki” “Is umar mein apna shauk pura karoun gi” “is age
mein shadi kaisa kar sakti hu” and many other similar questions that make us think and believe, age
limit us to achieve our goals and from many other things.
I have seen and witness, many female entrepreneurs, running their small business successfully no
matter what their age is and many girls getting married late but ending up happy and many girls
getting married early “timely” according to our society, but not happy. Most importantly, yes, girls
completing their education after getting married or no matter what their age is and passing with flying
colors.

So, in the end it is all about luck, hard work, determination and nothing to do with the age or gender.
So ladies, eliminate all those people from your life who de motivates you or taunts on the basis of age
or gender and wait and watch, you will start to feel positive again!
